Muffini s domaćim kefirom i kavom - Coffee kefir muffins

Sastojci i koraci pripreme

Ova količina sastojaka je dostatna za 14 muffin-a. Ja sam koristila silikonske kalupe za muffin-e.

Ugrijte pećnicu na 190 °C.


Mokri sastojci:

- 200 ml domaćeg kefira

- 2 jaja veličine L

- 100 ml skuhane ohlađene kave

- 1 1/2 čajna žlica ruma

- 125 g otopljenog maslaca


Suhi sastojci:

- 250 g brašna

- 45 g kakaa

- 3 čajne žlice praška za pecivo

- čajna žlica sode bikarbone

- čajna žlica cimeta

- 100 g šećera šećerne trske

- prstohvat soli


U posudi prvo pomiješajte suhe sastojke.

Zatim, u većoj posudi umutite mokre sastojke - prvo umutite jaja pa im dodajte ostale mokre sastojke.

Zatim, dodajte suhe sastojke u mokre i dobro miješajte dok se sastojci potpuno ne sjedine.

Smjesa će biti malo gušća te ju žlicom dodajte u kalupe za muffine.

Pecite 20-25 minuta ili dok čačkalica umetnuta u sredinu muffine ne bude čista.

Izvadite iz pećnice i ostavite ih da se potpuno ohlade.

Muffine premažite medom i pospite narezanim blanširanim bademima.

Ingredients and preparation steps

This amount of ingredients make 14 muffins.

I used silicone muffin molds. Preheat the oven to 190 °C. .


Wet ingredients:

- 200 ml of homemade kefir

- 2 large eggs

- 100 ml of coffee (cool down)

- 1 1/2 teaspoon of rum flavoring extract

- 125 g of melted butter


Dry ingredients:

- 250 g of gluten free flour

- 45 g of raw cacao

- 3 teaspoons of baking powder

- teaspoon of baking soda

- teaspoon of cinnamon

- 100 g of cane sugar

- pinch of salt


In a large mixing bowl whisk together dry ingredients.

In another mixing bowl whisk eggs, then add to them other wet ingredients, one by one.

Pour the dry ingredients into the wet ones and mix well until totally combined.

The batter will be very dense.

Scoop the batter evenly into the muffin moulds.

Bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.

Remove from the oven and allow to cool completely.

Glaze muffins with honey and sprinkle with sliced blanched almonds.
