Spring pancakes

To make pancakes, I use homemade kefir as a liquid base instead of milk. This time I used kefir from OPG-a Mario Krog MILK bar. Their kefir is a great alternative if you don’t t have time to make your own homemade kefir (or you just don’t want to).

Ingredients and preparation steps

  • 400 ml of homemade kefir
  • 2 eggs
  • 5 tablespoons of gluten free flour mix
  • 1 teaspoon of cinnamon

First combine kefir and eggs, then add cinnamon and flour and mix until smooth. Heat a skillet over medium heat (I used Delimano skillet for pancakes) and cook until browned on both sides.

Make pancakes about 10 cm in diameter (they’re easier to flip 🙂

Top this pancakes with your favorite spread. I enjoyed blueberries jam and hazelnut butter.

Serve with tea or coffee.
