Delicious cherry kefir cake
It’s cherry season, therefore it’s cherry cake time... soft and delicious.
This cake is the perfect bite to enjoy with a cup of coffee.
Ingredients and preparation steps
50 g of melted butter
200 ml of homemade milk kefir
50 g of sugar
60 g of white rice flour
200 g of gluten-free flour (I used Schär Mix B)
1 baking powder
1/2 teaspoon of baking soda mixed with 100 ml of homemade milk kefir
350 g of pitted cherries
Preheat the oven to 180 °C. Whisk eggs and sugar until creamy then add kefir and butter. Mix everything for a minute, then whisk flour, baking powder and kefir with soda into the mixture with a wooden spoon. Mix everything well, pour into a mold with baking sheet on the bottom and spread the cleaned cherries over the mixture. Bake for about 50 minutes (depending on the strength of your oven) until the toothpick inserted in the middle of the cake comes out dry. Drizzle with melted chocolate if desired. Serve with coffee and enjoy the flavors!
