Baked chicken thigh fillets with plums and broccoli

This delicious dish brings a perfect combination of juicy chicken breast, sweet roasted plums and broccoli.
The preparation is simple, and the results are outstanding! Everything is baked in the oven, the meat remains juicy and soft, the plums are caramelized, which gives them extra sweetness. At the same time, broccoli provides texture contrast and freshness to the dish.

Ingredients for chicken
800 g fillet of zabatka #Međimurskopile
1 teaspoon of sea salt
olive oil
1 teaspoon of dry rosemary or a couple of sprigs of fresh rosemary
1 teaspoon of dry oregano or a couple of sprigs of fresh oregano
10 plums
1 head of broccoli
100 ml of water
Ingredients for salad
1 head of lettuce
two handfuls of arugula
3 large tomatoes or two handfuls of cherry tomatoes
sea salt
olive oil
vinegar or fresh lemon juice
Preparation
Heat the oven to 200 °C.
Wash the plums and cut them in half. Wash the broccoli and cut the flowers from the stem.
Wash the zabatka filets and dry them with a paper towel. Put them in a deep frying pan and cover them with a couple of jets of olive oil, add salt and spices, then arrange plum halves and broccoli florets around the meat and cover with water.
Then, close the pan with aluminum foil. Bake in a heated oven for about 30 minutes, then remove the foil and bake for another 15 minutes.
While the chicken is baking, make the salad. Wash the lettuce, arugula and tomato. Tear the lettuce into smaller pieces with your fingers, cut the tomato into slices and, if necessary, tear the arugula into smaller pieces too. Add the amount of salt, oil and vinegar or lemon juice according to your taste.
Serve warm and enjoy the flavors!
